Ingredients:
Salad
4 cups (80g) rocket
3/4 cup (128g) cooked quinoa
1/2 cup (87g) pomegranate seeds
227g chicken breast
Salt and pepper to taste
Dressing
2 tbsp (30g) red wine vinegar
2 tbsp (27g) olive oil
1 tbsp (15g) tahini
1/2 tbsp (7g) Dijon mustard
1/2 lemon (juiced)
Salt and pepper to taste
Method
Combine rocket, cooked quinoa, and pomegranate seeds in a large bowl, and set aside.
Season the chicken breasts with salt and pepper and grill on both sides until cooked. Slice into thin pieces.
While the chicken is cooking, prepare the dressing. Combine red wine vinegar, olive oil, apple cider vinegar, tahini, Dijon mustard, lemon juice, salt and pepper in a small bowl. Whisk together until fully combined.
Pour the dressing over the rocket mix.
Top each serving with grilled chicken.
